Carole Lynn Jacoby

August 1, 1939 — April 24, 2021

Carole Lynn Jacoby, 81, of Eustis, FL, passed away Saturday, April 24, 2021. Born in Ashland City, Tennessee, she moved to Lake County, Florida in the late 1960s from South Florida.

Carole’s foundation in faith was apparent to all who knew her, and the church was never far from her heart and mind. A life-long member of the Church of Christ, Mt. Dora's congregation provided fellowship, life-long friends, and social activities that kept Carole busy. A godly woman who loved the Lord with all her heart, she was a humble, gentle, loving, spirit, and a powerful prayer warrior. Devoted to the Lord, Carole served the church by leading women’s bible-study and prayer groups. She prayed daily, read scripture from her ever-present bible and did daily devotionals.

Carole kept busy professionally at various jobs prior to becoming a mother. She found work in the insurance sector, then transitioned to work for the AeroJet Corporation, a somewhat-pioneer of the space program, operating out of the Everglades in Homestead, Florida. After her children were born, Carole began work at the Christian Home and Bible School of Mount Dora, where she served as secretary to the president for 33 years. Carole also worked at Rehbaum-Harden Funeral Home of Mount Dora, Florida.

Active in both social clubs and organizations, her personal letters and stories reflect just how much she enjoyed her work, and activities, and also the treasured, life-long friends she met at stops along the way. A natural leader, Carole served as either secretary or president on the boards of the many organizations which she served. She was Past President of Bay State South Homeowners Association, Eustis, a member of the Leesburg Junior Women's Club and served in various roles with the PTA as her children went through school.

In the midst of all these activities, Carole also enjoyed many crafts. She knitted and crocheted MANY caps and baby blankets for her congregation’s outreach program and donated to Waterman hospital for needy recent Moms. She loved attending her grandchildren’s sporting competitions and special events, working the daily crossword puzzle, putting together jigsaw puzzles, chatting up her friends on the phone, and reheating her coffee several times throughout the day.

Carole is preceded in death by her loving husband, Max Jacoby; and sister, Nancy Reed. She is survived by her son, Roy P. Moore (Kelly) of Boise, Idaho; daughter, Autumn Lynn Meachum of Bermuda Run, NC; sister, Billie Shell (Mike) of Tavares, FL; Brother-in-law, Rick Reed of Mt. Dora; grandchildren, Colton Moore and Mandi Nelson (Todd); Elayna Jade Meachum and Peyton Caroline Meachum; great grandchildren, Xandyr, Kaden, Mila; nieces, Emily Godwin and Becca Reed; nephew, Joe Cochran; and numerous extended family and friends. During the final months of her life, the Lord sent Carole an angel, Pilar Goddard, to comfort and care for her through her final breath. More than a care-giver, Pilar became a daughter to Carole. The family extend their deepest gratitude for Pilar’s love and comfort for Carole.


On what would have been Carole’s birthday, a celebration of her life will be held at Mount Dora Church of Christ, on Sunday August 1, 2021 at 2:00 PM. Please join us as we remember the joy and love Carole shared with all of us and her community. Memorial donations may be made to the Church of Christ Women’s program.
